A secondary fermentation and maturation process in an array of Bourbon Barrels lends a complex and tannic oak character, in addition to a subtle acidity resulting from the addition of Tart Cherries during aging. Finally, before packaging, 35 gallons of pure liquid cacao is added to create what can only be described as drinking a German chocolate cake. Liberal amounts of rolled oats in the malt bill smooth out the roastiness of the chocolate malt and caramunich adds a rich caramel malt character. Sip and savor.
